One of the main benefits of green tea is its high antioxidant activity, thanks to its high concentration of polyphenols. Compared to black tea, green tea contains more of the powerful antioxidant polyphenol EGCG (epigallocatechin-3-gallate), which is thought to promote the self-destruction of cancer cells.
Green tea usually contains less caffeine than black tea and has more L-theanine, an amino acid with a calming effect that can balance the overly stimulating effects of caffeine. In short, green tea acts as a beneficial stimulant for the body, while black tea (also an antioxidant) acts more as a physical stimulant (like coffee). It all depends on the effect you are looking for from your tea and, of course, your sensitivity to caffeine.

To maximize its benefits, the mode of preparation of green tea must respect certain rules:
Avoid boiling water. The ideal temperature for infusing Chinese green tea is between 70°C and 85°C. Above 85°C, the flavor and nutrients of green tea may be denatured.
Avoid steeping too long. Over two-thirds of the antioxidants are released within the first three to five minutes of steeping. Beyond this infusion time, green tea will also tend to become bitter. Both for its benefits and for the taste, it is therefore preferable to limit the infusion time to between 3-5 minutes.
